Wood + Vinyl Crafts from Super Saturday

If any of you ordered wood and vinyl craft projects for Super Saturday, but were unable to make it, please note that your projects are being stored in the Relief Society closet. You'll be able to pick them up on Sunday.

Pumpkin Cupcakes with Spiced Cream Cheese Frosting

















As requested, here is the recipe for the Pumpkin Cupcakes with Spiced Cream Cheese Frosting served at Super Saturday. The recipe is courtesy of Romina Rasmussen from Les Madeleines Bakery here in Salt Lake City. Enjoy!


Romina's Pumpkin Cupcakes


2 3/4 cups all-purpose flour
1 1/2 teaspoons baking soda
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon ground cardamom
1 teaspoon salt
2/3 cup chopped walnuts (optional)
1 cup raisins (optional)
1 can (15 oz.) solid-packed pumpkin (about 1 3/4 cups if you're making your own puree)
3/4 cup sugar
3/4 cup firmly packed dark brown sugar
1 cup canola oil
4 eggs

Spiced Cream Cheese Frosting

1 stick of butter, cubed and cold
8 oz. cream cheese*
1 cup powdered sugar
1 teaspoon vanilla
1/4 teaspoon spice mix (see below)

Spice Mix

1 tablespoon cinnamon
1 1/2 teaspoon ground ginger
1 teaspoon cardamom
1/4 teaspoon fresh ground nutmeg

Directions:

Preheat an oven to 350ºF. Line three 12-cup muffin tins with cupcake wrappers.

To make the cupcakes, in a bowl sift together the flour, baking soda, baking powder, cinnamon, nutmeg, cardamom and salt.

In another, larger bowl whisk together the pumpkin, granulated sugar, brown sugar and oil. Add the eggs one at a time, whisking after each addition. Add the flour mixture in three additions, stirring with a large wooden spoon until just combined.

Fill the muffin tins about 2/3 full. Bake until the cupcakes for 20 minutes. Transfer the tins to a wire rack and let cool for ten minutes; then remove the cupcakes from the tins and let cool completely.

To make the frosting, cream the butter until fluffy, but still cold. Add the cream cheese in small chunks. When completely combined (no lumps of either butter or cream cheese), add the powdered sugar. Beat until fluffy. Add the vanilla and then 1/4 teaspoon of the spice mix before blending one last time.

* make sure you use Philadelphia Original; I've found that anything else compromises the texture and flavor.

November Activities!

Monday, November 9th: Single Sister FHE will be at the home of Diane Brewer, 2439 Wood Willow Circle at 7:00 p.m.

Thursday, November 12th: Snack n Yak will be at Tamara Davis's home, 2436 Wood Willow Circle, at 7:00 p.m. The theme this month will be Thanksgiving Family Traditions. Share your favorite recipe's and have a great time visiting with the other sisters.

Saturday, November 14th: Super Saturday will be from 10:30 a.m. to 2:30 p.m. at the ward. Come ready for demonstrations on photography, cupcake decorating and to make the items you have signed up for. Lunch will be provided.

Tuesday, November 17th: Lunch Bunch will be at the Kyoto Japanese Restaurant, 1080 E. 1300 S. at 11:30 a.m.

Thursday, November 19th: Book Group will be at 7:00 p.m. at Alison Thomas's home, 2490 E. Fisher Lane #B. The book being reviewed is Pope Joan by Donna Woolfolk Cross.

October Activities!

Monday, October 12th: Single Sister Family Home Evening will be at 7:00 at the Knudson's home, 2980 S. 2520 E.

Wednesday, October 14: Play Group will be at Gardner Village at 10:30 am. Come and see the display of fun witches and pumpkins Gardner Village does every year. We will meet outside by Archibald"s. The address is 1100 West 7800 South.

Wednesday, October 14: Movie AND Book Group will be at Vickie Dean's house at 7:00. We will be reviewing the book The Count of Monte Cristo and watching the movie.

Thursday, October 22: Snack n Yak will be at Vickie Dean's home at 7:00. The theme this month is Halloween foods. Bring your favorite Halloween recipe.

Saturday, October 24: Neighborhood Halloween Party will be at 6:00 pm at the ward. Come dressed up with your children and have a great time!

Tuesday, October 27: Lunch Bunch will be at 11:30 at Neil's Fish 'n Chips, 4810 S. Highland Drive. This is directly west of the old Cottonwood Mall. and next to The Training Table.

Silver Lake

Thank you to all the friends that came to playgroup and enjoyed the beautiful canyon weather with the sisters and their families. We had an amazing turnout with tons of kids. This is picture believe it or not is actually missing 6t kids. For anybody that ws not able to make it up there I hope you guys can take a day and just take your own families up there to enjoy the gorgeous outdoors it is a perfect place for kids and families.

Primary Activity with Dad...

Where: at the RC2 building, mostly outside
Time: 11:00-12:30pm, lunch provided
Who: Primary children AND Dads/Grandfathers

...maybe this Father's Day-inspired activity could be retitled "Mom's little Saturday Break"!

For any sisters who might check in here before tomorrow at 11am, don't forget the Primary Activity. Really. Here is Dad's chance to enjoy some quality time with the kids...fishing, camping, cooking out, playing sports, building stuff. We have lots of fun and food planned, so send off your kids and husbands and enjoy some time off!:)

Playgroup

This is what it looks like up there and as you can see we have kids of all ages. It is kid and baby friendly.
Hello sisters!! I hope Wheeler Farm was a fun trip and some of you made it there and were able to visit and socialize together. Our next group will be on Wednesday July 8. We will be going to Silver lake up Big Cottonwood Canyon. It is by the visitor center just below the Brighton ski resort. It is a beautiful place to walk around. We will be taking a small hike/walk around the lake. We will eat lunch afterwards if you want to stay. Bring your sack lunches. I love to go up here and look forward to having this outing. I promise I will make it to this one. I should have my kids schedules all figured out by then..right?! If you have any questions you can call me ( Lindsay) or post them and I will check back.

Oh and I guess you all will want to know what time and where we will meet up there. We will meet at 10 am and at the restroom trail head area.

Cancellation

We will hope for warm weather and for the following playgroup in July we will be going up to Silver Lake up Big Cottonwood.
Hello Sisters! I thought with the rain coming off and on tomorrow it would be better to re schedule and meet at the Farm next week when the weather will be better. Sorry for the trouble this causes anyone I just thought it would be best for all involved. Have a GREAT day and we will hope to see you all on Tuesday the 16 at 10 am . Wheeler Farm meet on the grass and bring a lunch if you want to picnic after. See you all soon

Scripture group

I put up a post on the Scripture Group blog last week after our meeting...I'm hoping to utilize the blog more so that we can motivate each other more with our scripture study. There's a question I asked the sisters at our last meeting, and I'm posing the same question to everyone; if you have a chance, go take a look. The link is on the side bar of this blog.

So far, we have a few sisters who have signed up as "contributors" to the Scripture Group blog(which means they can post on the blog). Anyone can comment, but if you would still like to contribute, leave a comment or send me an email and I can send you an invitation.

PLAYGROUP

Playgroup will be at Wheeler Farm on Tuesday june 9th at 10 am. We will meet there ad you can stay as long as you want. If you would like you can pack a lunch and after we see the animals we can have a little picnic. Wheele farm is always ALOT of fun and kids love it! It is FREE! Invite anyone you think would enjoy this outing!
